THE BEST Chocolate Chip Muffins

THE MOST INSANE MUFFINS YOU WILL EVER HAVE. This is my most requested recipe by all my friends they are soft, fluffy, and perfectly chocolatey. The zucchini keeps them incredibly moist, and you truly can’t taste it. Trust me, you won’t regret making them.
Ingredients
3 cups grated zucchini (about 2 small zucchini, no need to squeeze out moisture)
1 ¾ cups gluten-free flour
⅓ cup unsweetened cocoa powder
1 ½ tsp baking soda
½ tsp salt
2 tsp vanilla extract
1 ¼ cups brown sugar
2 eggs
7 tbsp unsalted butter, melted
Chocolate chips (as much as you’d like + more for the top)
Instructions
Preheat oven to 350°F and line a muffin tin
Grate your zucchini
In a large bowl, whisk together gluten-free flour, cocoa powder, baking soda, and salt.
In a separate bowl, mix the eggs, brown sugar, melted butter, and vanilla until smooth.
Add the wet ingredients to the dry and mix until just combined.
Once mixed, stir in the grated zucchini. Fold in chocolate chips.
Pour batter into prepared pan.
Top with extra chocolate chips
Bake 18–20 minutes
