Ingredients
2 tbsp olive oil
1 onion, diced
2–3 cloves garlic, minced
2-3 red bell pepper, diced
1 can (14–15 oz) crushed tomatoes
1 tsp paprika
1 tsp cumin
1 tsp chili powder
½ tsp chili flakes (optional)
Salt & pepper to taste
4–6 eggs
Feta (Optional)
Fresh cilantro or chives, chopped
Instructions
Heat olive oil in a pan over medium heat. Add onion and cook until softened, about 3–5 minutes.
(Optional) If using meat, add it now and cook until browned, breaking it up as it cooks.
Add garlic and bell pepper, cooking for another 3–4 minutes until softened and fragrant.
Stir in crushed tomatoes, paprika, cumin, chili flakes, salt, and pepper. Let simmer for 10–15 minutes until slightly thickened.
Make small wells in the sauce and crack the eggs into each one.
Cover and cook until eggs are set to your liking, about 5–8 minutes.
Finish with fresh herbs and feta if using. Serve immediately.
Enjoy!
