Ingredients

  • 2 tbsp olive oil

  • 1 onion, diced

  • 2–3 cloves garlic, minced

  • 2-3 red bell pepper, diced

  • 1 can (14–15 oz) crushed tomatoes

  • 1 tsp paprika

  • 1 tsp cumin

  • 1 tsp chili powder

  • ½ tsp chili flakes (optional)

  • Salt & pepper to taste

  • 4–6 eggs

  • Feta (Optional)

  • Fresh cilantro or chives, chopped

Instructions

  • Heat olive oil in a pan over medium heat. Add onion and cook until softened, about 3–5 minutes.

  • (Optional) If using meat, add it now and cook until browned, breaking it up as it cooks.

  • Add garlic and bell pepper, cooking for another 3–4 minutes until softened and fragrant.

  • Stir in crushed tomatoes, paprika, cumin, chili flakes, salt, and pepper. Let simmer for 10–15 minutes until slightly thickened.

  • Make small wells in the sauce and crack the eggs into each one.

  • Cover and cook until eggs are set to your liking, about 5–8 minutes.

  • Finish with fresh herbs and feta if using. Serve immediately.

Enjoy!
