GF Cinnamon Streusel Banana Bread

Soft, cinnamon spiced banana bread with a buttery crumble top and sweet glaze, gluten-free, ridiculously moist, and lasts less than 48 hours in my kitchen.

Ingredients

Loaf

  • ½ cup melted butter

  • 1 cup sugar

  • ½ cup plain yogurt

  • 2 eggs

  • 1½ tsp vanilla

  • 3 ripe bananas, mashed

  • 1½ cups gluten-free flour

  • 1 tsp baking soda

  • 1½ tsp cinnamon

Crumble Topping

  • ¼ cup melted butter

  • ¼ cup sugar

  • ⅔ cup gluten-free flour

  • 1 tbsp cinnamon

Glaze

  • ½ cup powdered sugar

  • 1 tbsp milk

Directions

  • Preheat oven to 350°F and grease or line a loaf pan

  • In a bowl, whisk together melted butter + sugar

  • Add yogurt, eggs, and vanilla, mix until smooth

  • Stir in mashed bananas

  • Fold in gluten-free flour, baking soda, and cinnamon

  • Mix until just combined (don’t over mix)

  • Mix melted butter, sugar, flour, and cinnamon

  • Use your hands or a fork until it forms a crumbly texture

  • Pour batter into loaf pan

  • Evenly sprinkle crumble over the top

  • Lightly press it in so it sticks (key for not losing it all when slicing)

  • Bake for 50–60 minutes

  • Toothpick should come out clean or with a few moist crumbs

  • Let cool at least 20 minutes

  • Mix powdered sugar + milk

  • Drizzle over the top
