The French Onion Soup

This French onion soup is slow, simple, and completely worth it. The onions cook down into something deeply rich and caramelized, the broth is warm and comforting, and the whole thing gets finished with toasted gluten-free bread and layers of melty cheese. It’s cozy, a little indulgent, and the kind of recipe that feels way more impressive than it actually is.

Ingredients

  • 4 large yellow onions, thinly sliced

  • 4 tbsp butter

  • 1 tsp salt

  • ½ tsp black pepper

  • 3 cloves garlic, minced

  • ½ cup dry white wine (optional)

  • 6 cups beef broth (or veggie broth)

  • 1 tsp Worcestershire sauce (make sure it’s GF)

  • 2–3 sprigs fresh thyme (or ½ tsp dried)

  • 1 bay leaf

  • 2 tbsp gluten-free flour

For serving:

  • 4–6 slices gluten-free bread, toasted

  • 1½–2 cups shredded mozzarella

  • Optional: ½–1 cup Gruyère or Swiss for more classic flavor

  • Optional: Chives for topping

Directions

  • Melt butter in a large pot over medium heat. Add onions, salt, and pepper.

  • Cook slowly, stirring often, for 30–40 minutes until deeply golden and caramelized.

  • Add garlic and cook for 1 minute until fragrant.

  • Sprinkle in gluten-free flour and stir to coat onions, cooking for 1–2 minutes.

  • Pour in white wine, scraping up browned bits, and let simmer until slightly reduced.

  • Add broth, Worcestershire sauce, thyme, and bay leaf.

  • Simmer and cover for 20–30 minutes to develop flavor. Remove thyme stems and bay leaf.

  • Ladle soup into oven-safe bowls.

  • Top each with a slice of toasted gluten-free bread and a generous handful of mozzarella (and optional Gruyère/Swiss).

  • Broil until cheese is melted, bubbly, and golden. (Optional: top with chives)

  • Let cool slightly, then serve.
